Kids' Birthday Cakes





While living in Arizona my son attended a train-themed birthday party. I was inspired by the cute home-made cake that looked like several train cars in a row. I realized you could make almost anything out of a cake if you just broke that shape down into its basic shapes and use various pans accordingly. There are also some great cake forms out there that work well (see the blue car). I love the lack of pressure involved in cake decorating for children; as long as it tastes good they don't care WHAT it looks like!

EASY BUTTER FROSTING

1/3 c. butter
4 1/2 c. powdered sugar
1/4 c. milk
1 1/2 t. vanilla
milk
food coloring (optional)

In a mixing bowl beat butter until fluffy. Gradually add 3 cups of the powdered sugar, beating well. Slowly beat in the 1/4 cup milk and vanilla. Slowly beat in remaining powdered sugar. Beat in additional milk, if needed to reach spreading consistency. Tint with food coloring if desired. This frosts tops and sides of 2 8-inch cakes.
