Dinner Winner

"You've gotta win a little, lose a little." These lyrics definitely apply to dinner around our house! I have a judge's panel of five that is never bashful about their opinions, so I quickly learn which recipes to toss out immediately and which ones to hold on to. I thought I'd pass on the meal that gets the best reviews of the week and let you see what your panel thinks!

This week the winner is an old stand-by, lovingly referred to by the kiddies as "Green Pasta." The best part of this dinner (besides how quick and easy it is) is that the kids love to go out in the backyard and pick the basil leaves that actually grew this year! (You can always buy a couple of packages in the fresh spices section of your local grocery store that will do just fine too.)

SPAGHETTI AL PESTO



1 large bunch fresh basil (1 1/2 cups firmly packed—try to use smaller leaves. Large ones become bitter)
1/3 c. olive oil
3 T. pine nuts
3/4 t. salt
1/2 c. fresh grated Parmigiano or Pecorino cheese
1 garlic clove
1 medium baking potato, peeled and medium diced
1 lb. spaghetti or pasta of choice

Put all ingredients in blender. Blend until it becomes a thick, dark green sauce. Bring a large pot three-fourths full of water to a boil. Add a bit of oil and salt to taste, the potatoes, and the spaghetti and cook until al dente. Then add the pesto to the pasta and potatoes. Add olive oil, cheese and salt to taste. Serve immediately. Serves 4-6.
